Meet Kim Rice, her blog is thrivinggf.com, Kim is a Wellness Coach and “warrior mom” of three children. She has been following a gluten and dairy-free diet since 2007. Kim experienced amazing results losing over 60 pounds and a whole host of health issues along the way. Her son on the autism spectrum has been on the diet since 2009 and it has changed the course of his life. He is now considered “recovered.” As a Wellness Coach, Kim is passionate about helping others transition to a gluten and dairy-free lifestyle. 3. Which panel topic do you look forward to hearing most and why?
All the topics are awesome but I think The Art of Recipe Development and Self-Publishing topics intrigue me the most since 1) I did not plan on doing recipe development but it seems to be expected of me and 2) because my original intent before becoming a blogger was to publish a book which I would really like to focus on now.
4. What is the best thing about food allergies?
Most people with food allergies are very sensitive people. Our bodies force us to pay attention to how foods affect us so as a result we are more in tune with our body and generally have to eat healthier than the average person.
5. What motivated you to start blogging about food allergies?
After healing my body and recovering my son from autism through diet intervention, I wanted to share our healing journey and motivate people to pay attention to what their body is revealing to them about the foods they are consuming. I want to give hope to people that they can transform their health and life through dietary choices.
6. What is the best thing about the online food allergy community?
Hanging out with all these awesome bloggers who share many of the same obstacles and challenges.
8. What other blogger has inspired you?
So many have inspired me but the Gluten Free Goddess stands out for me because well, she’s a goddess…plus I love her photography. I’m very visual.
