Sarah Norris GFDFWDWSarah Norris is the author of the Gluten Free & Dairy Free at WDW Blog. She chronicles her gluten free and dairy free dining experiences at Walt Disney World and provides reviews, tips, and tricks for visitors to the resort with special diets. As a self-proclaimed Disney junkie, she has been vacationing at the Walt Disney World Resort since she was 2 ½ years old. In 2009, she was diagnosed with Crohn’s Disease and food intolerances. She created the Gluten Free & Dairy Free at WDW Blog around the first time she went to Walt Disney World with dietary restrictions in an effort to provide helpful information to fellow Disney travelers. You can find her on Facebook: https://www.facebook.com/gfdfwdw & Twitter: https://twitter.com/gfdf_wdw

1. Who do you look forward to seeing/meeting most at FABC and why?

Everyone, really. I’ve connected with a lot of folks already through social media, so it will be terrific to meet everyone in person. I feel like I “know” lots of you already!

2. Which of your blog posts are you most proud of and why?

Probably the post(s) related to the Food Allergy events that I host at the Walt Disney World Resort. Hosting events where food is free of the top common allergens and providing those unique experiences for families and specifically children is extremely important to me!

3. Which panel topic do you look forward to hearing most and why?

Getting Heard ~ How to be an effective advocate. I think we can all continue to work on being an effective advocate. I’m always striving to improve and reach out to the allergy community in a meaningful way.

4. What is the best thing about food allergies?

The community! Everyone is so welcoming and encouraging to each other. I came into the special diets community feeling like I was alone and now have made so many wonderful connections because of it. There is something truly special about this community, and I can’t imagine my life now without it.

5. What motivated you to start blogging about food allergies?

I started my blog around the time I first went to Disney World with dietary restrictions 4 years ago. I had been visiting the theme parks for many years and knew I loved the food there but felt totally blindsided when I went to Disney with special diets the first time. I found lots of great information on blogs and websites about gluten free diets at Disney but not as many for folks with multiple dietary needs. I really wanted to share my experiences to other people out there just like me and especially to families traveling to Disney World.

4. What is the best thing about food allergies?
Since there is a positive in everything…I would say that living with food allergies in our house has made us healthier eaters and I have met so many fantastic people!
5.  What motivated you to start blogging about food allergies?
I started blogging in general because everyone questioned what we ate as vegetarians.  When you throw food allergies into the mix your food groups are restricted even more.  The blog shows our family, friends and others the fun things you CAN eat and not miss out on.  Its really about creating a community to help each other! We are all in this together!
 6. What is the best thing about the online food allergy community?
Everyone is SO supportive and understanding!  If we encounter a problem, we can throw it out to social media and instantly get support and/or an answer!

Kim Rice

Meet Kim Rice, her blog is  thrivinggf.com,  Kim is a Wellness Coach and “warrior mom” of three children. She has been following a gluten and dairy-free diet since 2007. Kim experienced amazing results losing over 60 pounds and a whole host of health issues along the way. You can follow Kim on Facebook:  Thriving GF; and Twitter: @ThrivingGF

 3. Which panel topic do you look forward to hearing most and why?

All the topics are awesome but I think The Art of Recipe Development and Self-Publishing topics intrigue me the most since 1) I did not plan on doing recipe development but it seems to be expected of me and 2) because my original intent before becoming a blogger was to publish a book which I would really like to focus on now.

4. What is the best thing about food allergies?

Most people with food allergies are very sensitive people. Our bodies force us to pay attention to how foods affect us so as a result we are more in tune with our body and generally have to eat healthier than the average person.

5. What motivated you to start blogging about food allergies?

After healing my body and recovering my son from autism through diet intervention, I wanted to share our healing journey and motivate people to pay attention to what their body is revealing to them about the foods they are consuming. I want to give hope to people that they can transform their health and life through dietary choices.

6. What is the best thing about the online food allergy community?

Hanging out with all these awesome bloggers who share many of the same obstacles and challenges.

8. What other blogger has inspired you?

So many have inspired me but the Gluten Free Goddess stands out for me because well, she’s a goddess…plus I love her photography. I’m very visual.
