Save the Date for 2014!

We are pleased to announce that we will be returning to the South Point Hotel in Las Vegas, Nevada for the 2nd annual Food Allergy Bloggers Conference!  We will be holding the conference on September 26, 27, and 28th of 2014.  As you know, we feel very personally responsible for getting the food right- and to do so for over 100 people with differing dietary restrictions is no small feat! We were very pleased and impressed with the South Point, and Chef Keith Norman‘s passion in making sure we were all well fed and safe!

For 2014, we hope to have some new topics and speakers as well as some returning favorites too! We will be announcing an open call for speakers and topics to be submitted January 1st- January 20th, 2014 so if you have an idea, want to be a presenter, or want to hear about or from someone else- get those ideas to us ASAP! We will then look the submissions over, along with the exit survey results from 2013, to put together our agenda for 2014.  Stay tuned for more exciting updates and announcements, we are securing a discounted room block and other details that we’ll share here and on our e-newsletter.  You can also follow us on Facebook and Twitter – have a great and safe New Year!

South Point Vegetable Soup Recipe

The South Point Hotel saw that we had a couple of our conference attendees request the property’s allergy-friendly Garden Vegetable Soup recipe following the event.

The chefs had to revise the recipe for smaller portions, but we finally have it. None of the requesters had a direct email in their Twitter profiles or blogs, so they figured they’d just share it with me to post on the event’s website. How sweet was that?! These guys are top-notch! This was served to us Monday at lunch!

Garden Vegetable Stock Soup

Serve 6-8 Servings

1 cup white Onions
2 cups peeled and chopped Carrots
1 cup washed and chopped Celery
2 tablespoons chopped Garlic
1 sprig of fresh Thyme
1 sprig of fresh Rosemary
4 cups peeled seeded and chopped Tomatoes
2 quarts fresh chicken stock for allergen friendly soup or allergen friendly stock purchased

For fresh stock add 2 pounds of fresh chicken bones to the above mix, bring mixture to a boil and then reduce to a simmer and simmer for 30 minutes. Remove from heat and strain stock.

Add Roasted or sauté Vegetables to Stock: Vegetable can be tossed in olive oil and placed in the oven to roast or can be sauté until tender.

1 cup peeled and diced Carrots
1 cup dice Yellow Squash
1 cup dice Zucchini
Choice of Pasta optional

Now we all have a little bowl of comfort food to nourish us until Next Fall! I know I won’t make and eat this without thinking of our wonderful weekend together! 🙂

Attendees need to e-mail fablogcon@gmail.com with any websites, twitter handles, and other information they would like included in conference materials so that it will be easy to reach one another during and after the conference!  We’ve got the basics from your registration but if there’s anything you want included (or not included) please be sure to let us know.  The deadline for inclusion in the distributed directory is October 15, 2013.

Great Hotel Group Rate

We are being hosted at the South Point Hotel and Casino so have a fantastic group room rate (here’s a custom link, or reference the code FOO1102) so that if there are one or two people in a room you’ll be able to stay for $80* per night for November 1st and 2nd but only $50* per night for November 3rd and 4th.  If you add a third person to a room the rate increases by $20 per night which is still a great deal!  If you’d like to look into connecting with a roommate, there is a private Freedible group you can post to.

*There is an additional $14 per night resort fee plus taxes that are not included in the group room rate.  The resort fee has benefits that include: Complimentary in-room WIFI/internet, Complimentary Fitness Center access, Complimentary Airport Shuttle, Free local/toll free phone calls, Complimentary printing of Boarding Passes (great idea!), Complimentary WIFI in Business Center, and Complimentary parking and valet.

Chef Keith Norman on KTNV

Chef Keith Norman of the South Point Hotel did an interview for KTNV Las Vegas Morning Blend TODAY at 9:45 a.m.  South Point Hotels Chef Keith talked about the importance of food allergen safety inside the hotel restaurants, his work with FARE, as well as his recent award from the Southern Nevada Health District! He also showed off the new top 8 allergen free cutlery kits that the South Point will be using at their restaurants to lessen any cross contamination risks.


Chef Keith also was kind enough to mention FARE, The Las Vegas Food Allergy Awareness Walk, and also the Food Allergen Bloggers Conference! Ok ok, so the name was wrong, but I can tell you we were not the only people letting out excited squeals when it was mentioned!


Chef Keith was a big reason why we chose the South Point as the host for this conference. The South Point has taken a fantastic proactive stance in catering to those with food allergies and adopting safe practices in their restaurants and food service. We want everyone to come knowing that we are all planning to make sure this is a huge, delicious, safe success!

Chef Keith Norman

ChefKeithWe would like to introduce you to Chef Keith Norman of the South Point Hotel. We know that traveling with food allergies can be hard. It requires trusting others with your food safety, your health and your life. Chef Norman’s knowledge and safe allergy practice made choosing the South Point Hotel to have our conference at a smart decision when we carefully considered our need to provide safe meals to our audience. 

A Chef prepares food with care and love, they relish making people happy, feeding their souls, and bodies! Imagine if thing you loved most could kill people you were entrusted to care for? I think Chef Norman’s true empathy and concern comes through when he answered ‘Do you or a family member have allergies?’ He answered “No, I am not personally affected- but what if? That’s how I see it! Any one of the stories that I have read and heard could be my story. It’s very easy to want to be a part, and to help make a difference.”   

I asked Chef Norman how he became ‘allergy aware’- he answered “I have always been aware of allergens, but I became more involved after meeting the Gordins, and when I was asked to present at the 2011 Conference here in Las Vegas.  I teach part-time at the Art Institute here in LV, and yes- when I teach the Sersafe Certification Course I always add Allergen Training!”

As a Veteran Marine and with 20 years in the culinary arts field, Keith Norman brings a sense of discipline and order to everything he does, both in business and in the culinary world.  Chef Norman has a passion for food safety and sanitation that is apparent in his role as Assistant Executive Chef and Food Safety Manager for the South Point Hotel & Casino and as a culinary arts instructor at The International Culinary School at The Art Institute of Las Vegas.  In both roles, Chef Norman is responsible for training and educating students and culinary professionals in one of the most important facets of the foodservice industry.  

He has worked his way up the culinary ladder at Las Vegas properties to include Bally’s, the Mirage, Treasure Island, Paris, Suncoast and South Point hotels and casinos.  He is a certified professional food manager, certified HACCP (Hazard Analysis and Critical Control Points) manager, NEHA (National Environmental Health Association) certified food trainer, NRA (Nevada Restaurant Association) certified food safety trainer, a certified registered OSHA (Occupational Safety and Health Administration) trainer and a master certified food executive.  Chef Norman has trained through the FDA (Food and Drug Administration) in the areas of foodborne illness investigation, agro-terrorism and food systems disasters.

He is a member of the Casino Management Association, International Food Safety Council, Black Culinarian Association and Nevada Food Safety Task Force, Stop Foodborne Illness, and FAAN (Food Allergy and Anaphylaxis Network).

Las Vegas FARE Walk

We would like to invite you to come to Vegas on Friday, November 1st, and join us on Saturday morning for the Las Vegas FARE Walk which will be held at 10:00 AM on November 2nd. Registration opens at 8:30 AM.  If you would like to come to Las Vegas on Friday, and join our walk team for the Las Vegas FARE Walk, we are planning to offer a shuttle service to and from the event on Saturday so register early and let us know if you’d like to ride with us to The District for the walk. The South Point will extend a discounted rate to guests booking Friday night too! We will also have some gift certificates courtesy of The South Point and the Las Vegas FARE for the top fund raisers on the ‘Food Allergy Bloggers’ Team! The top fundraiser will win a FREE 2 nights 3 day stay for the South Point Hotel, good through August 2014 (covers room & tax only) for the highest fundraiser as of midnight PT November 1, 2013.  The second highest fundraiser shall win a full conference ticket for the 2013 FAB event. The third highest fundraiser shall win a FREE dinner for 2 at the South Point Hotel.

Come Friday, and make a weekend of it! It will be a lot of fun, and can give you some extra time to visit with other conference attendees, and site see around Vegas [Friday night and after the Walk]!
